How can you keep them interested?

Target or Strategic Marketing

Do you know 99% of people who show an interest in your products just aren't ready to buy right now?
Some will end up buying straight away but some just want information.
1% of people are now buyers and target marketing works for these people but the rest require strategic marketing which provides more information.

Information

If someone shows an interest what do you do?
a) Explain to them what you do
b) Book in a follow up meeting to discuss
c) Feed them information regularly about what your business can do
d) Nothing

Hopefully it isn't D

If someone is interested but they aren't ready to buy NOW then you need to be there and available when they are.
You want to ensure the information you give them compels them to buy from you and not your competitor.

How do you ensure people buy from you in the future?

One way is to create a drip campaign.
If you create a squeeze/landing page on your website, whereby you can collect interested parties details, such as email or address, then you can send them information on your products and services regularly, to ensure when they are ready to buy you are always in their minds.
